- Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan with olive oil and line the bottom with parchment paper.
- In a large mixing bowl, whisk together 2 cups of flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.
- In a separate bowl, beat 2 eggs until frothy, then mix in 0.25 cups of olive oil, 1 cup of milk, and 2 minced garlic cloves.
- Gently combine the wet and dry mixtures. Fold in 1 cup of shredded mozzarella, 0.5 cups of chop sun-dried tomatoes, 0.25 cups of fresh basil, and 0.25 cups of grated parmesan cheese.
- Transfer the batter into the prepared loaf pan and smooth the top. Sprinkle reserved mozzarella over the batter.
- Bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean. If browning too quickly, tent with foil.
