Step-by-Step Instructions for Mushroom Swiss Cheese Meatloaf
  1. Finely chop mushrooms and sauté in a skillet over medium heat for 5–7 minutes until soft and golden, then remove from heat and let cool.
  2. In a large mixing bowl, combine ground beef, ground pork, cooled sautéed mushrooms, breadcrumbs, eggs, salt, pepper, and garlic powder. Mix gently until just combined.
  3. Transfer mixture onto a parchment-lined baking sheet or greased baking dish, forming into a loaf shape about 2 inches thick.
  4. Make a shallow indentation down the center of the meatloaf and fill with shredded Swiss cheese.
  5. Crumble crispy bacon over the meatloaf, allowing it to fall into the grooves.
  6. Preheat oven to 375°F (190°C) and bake meatloaf for about 1 hour until golden brown and internal temperature reaches 160°F (71°C).
  7. Carefully remove from oven and let it rest for 10 minutes before slicing.
