For the Coating

Method
 

Step-by-Step Instructions
  1. Soak dates in hot water for about 15 minutes if they're firm. Measure out other ingredients.
  2. Blend soaked dates, pecans, coconut sugar, sea salt, vanilla extract, and ground cinnamon in a food processor until sticky.
  3. Scoop out about a tablespoon of mixture and roll into a ball. Flatten slightly and place on a lined cookie sheet. Chill in the freezer for 15 minutes.
  4. Melt chocolate chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
  5. Dip each chilled bite into melted chocolate and place back on the cookie sheet. Top with whole pecans.
  6. Freeze again for 15-20 minutes until chocolate hardens.
  7. Transfer to an airtight container. Store in the freezer for best texture.
