Ingredients
  

For the Chicken
  • 4 pieces Chicken Thighs Boneless thighs can be substituted.
  • 1 tsp Salt Adjust according to taste.
  • 1 tsp Pepper Adjust according to taste.
For Searing and Flavor
  • 2 tbsp Vegetable Oil Can use any neutral oil.
  • 1 inch Ginger Fresh ginger is best.
  • 3 pieces Scallions Substitute with chives if needed.
For the Sauce
  • 2 tbsp Shaoxing Wine Dry sherry can be used as a substitute.
  • 2 tbsp Soy Sauce Tamari is a great gluten-free alternative.
  • 2 tbsp Oyster Sauce Choose high-quality brands for best flavor.

Method
 

Preparation and Cooking
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken thighs under cold water and pat dry. Season with salt and pepper.
  3. Heat a large roasting pan over medium-high heat and add vegetable oil. Sizzle fresh ginger for 1-2 minutes.
  4. Lay the seasoned chicken thighs skin-side down in the hot pan and sear for 5-7 minutes until golden. Flip and sear the other side for 3-4 minutes.
  5. Add chopped scallions to the pan around the chicken.
  6. Mix Shaoxing wine, soy sauce, and oyster sauce in a bowl, then pour over chicken and scallions.
  7. Transfer the pan to the preheated oven and roast for 25-30 minutes until done.
  8. Let chicken rest for a few minutes before serving over rice or with veggies.
