Preparation and Cooking
- Preheat your oven to 425°F (220°C).
- Rinse the chicken thighs under cold water and pat dry. Season with salt and pepper.
- Heat a large roasting pan over medium-high heat and add vegetable oil. Sizzle fresh ginger for 1-2 minutes.
- Lay the seasoned chicken thighs skin-side down in the hot pan and sear for 5-7 minutes until golden. Flip and sear the other side for 3-4 minutes.
- Add chopped scallions to the pan around the chicken.
- Mix Shaoxing wine, soy sauce, and oyster sauce in a bowl, then pour over chicken and scallions.
- Transfer the pan to the preheated oven and roast for 25-30 minutes until done.
- Let chicken rest for a few minutes before serving over rice or with veggies.
