  • 1 tablespoon Oil can substitute with canola or vegetable oil
  • 4 pieces Boneless Skinless Chicken Breasts main protein source
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Italian Seasoning
For the Rice and Base
  • 3 cloves Garlic minced
  • 1 cup Long Grain White Rice basmati preferred
  • 1 teaspoon Turmeric
  • 1 teaspoon Dried Dill substitute with fresh for enhanced flavor
For the Creaminess and Flavor
  • 1 medium Lemon fresh juice
  • 1 can Cream of Chicken Soup consider low-fat varieties
  • 2 cups Chicken Broth reduced-sodium if preferred
For Garnishing
  • to taste Garnish fresh parsley and basil, also lemon slices

Method
 

Step-by-Step Instructions
  1. Generously season your boneless skinless chicken breasts on both sides with salt, pepper, and Italian seasoning. Allow to rest while you prepare the skillet.
  2. Heat oil in a large skillet over medium-high heat. Add the seasoned chicken breasts, searing for about 3 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add more oil if necessary, then add minced garlic, long grain white rice, turmeric, and remaining Italian seasoning. Sauté for 1 minute, stirring frequently.
  4. Pour in the fresh lemon juice, scraping the bottom of the skillet to deglaze. Add chicken broth and cream of chicken soup, stirring well and bring to a simmer.
  5. Carefully place the chicken back into the skillet, cover, and let it simmer for about 15 minutes until the chicken is tender and cooked through.
  6. Remove from heat and garnish with fresh parsley, basil, and a few lemon slices.
