For the Meatloaf
  • 1 lb Ground Beef or ground turkey for a lean dish
  • 1 1/4 teaspoons Salt Essential for enhancing flavor
  • 1/4 teaspoon Ground Black Pepper or white pepper as alternative
  • 1/2 cup Chopped Onion or shallots for a milder taste
  • 1/2 cup Chopped Bell Pepper or finely chopped celery
  • 1 large Egg lightly beaten
  • 8 oz Canned Diced Tomatoes without juice
  • 1/2 cup Quick-Cooking Oats or breadcrumbs
For the Glaze
  • 1/3 cup Ketchup or BBQ sauce
  • 2 tablespoons Brown Sugar or honey/maple syrup
  • 1 tablespoon Mustard or Dijon for extra kick

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease your loaf pan.
  2. In a large mixing bowl, combine ground beef, salt, black pepper, chopped onion, chopped bell pepper, egg, canned diced tomatoes, and quick-cooking oats. Mix until just combined.
  3. Transfer the mixture into the prepared loaf pan, shaping it into a loaf.
  4. In a separate bowl, stir together the ketchup, brown sugar, and mustard. Spread half of the glaze over the top of the shaped meatloaf.
  5. Bake in the preheated oven for about 1 hour, until it reaches an internal temperature of 160°F (70°C).
  6. Remove from the oven, spread the remaining glaze on top, and broil for 2-3 minutes.
  7. Let the meatloaf rest for 5-10 minutes before slicing.
