Vinaigrette

  • 2 tablespoons Hot Honey adjust to taste
  • 2 tablespoons Apple Cider Vinegar can substitute with white wine vinegar
  • 1 tablespoon Dijon Mustard try whole grain for different texture
  • 1 clove Garlic (minced) fresh garlic recommended
Salad
  • 4 ounces Prosciutto or Pancetta crispy bacon can be used
  • 1 cup Cooked Orzo substitute with gluten-free or whole grain if needed
  • 2 chopped Peaches nectarines can be used
  • 1 cup Mozzarella Pearls swap for feta for a tangy kick
  • 1/4 cup Fresh Basil (chopped) or try mint
  • 1 cup Arugula (optional) can also use spinach

Method
 

Preparation Steps
  1. In a small jar, whisk together olive oil, hot honey, apple cider vinegar, Dijon mustard, minced garlic, and salt. Shake until combined.
  2. Heat a skillet over medium heat and sauté chopped prosciutto for 5-7 minutes until crispy.
  3. In a pot, boil salted water and cook orzo for 8-10 minutes until al dente. Drain and rinse under cold water.
  4. In a mixing bowl, combine orzo, chopped peaches, prosciutto, mozzarella pearls, chopped basil, and arugula. Toss gently.
  5. Drizzle the vinaigrette over the salad, toss to coat, and adjust seasoning if needed.
