Baking Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine smooth peanut butter, unsalted butter, packed brown sugar, and granulated sugar. Mix until creamy.
- Add the egg and vanilla extract, beating until fully combined, scraping down the sides as necessary.
- Gradually stir in the flour and baking soda until a soft dough forms.
- Roll about a tablespoon of dough into a 1-inch ball and place on baking sheets, spacing them 2 inches apart.
- Bake for 8 to 10 minutes until puffy and cracked on top, slightly underbaked is ideal.
- Immediately press a chocolate kiss into the center of each warm cookie.
- Cool on baking sheets for 5 minutes before transferring to a wire rack.
