For the Salad
  • 4 large Grilled Sweet Peppers Any bell pepper variety can be used.
  • 1 pint Burst Cherry Tomatoes Grape tomatoes are a great alternative.
  • 1/2 cup Tangy Olives Capers can substitute for a non-olive option.

  • 8 ounces Creamy Burrata Cheese Mozzarella is a great substitute if unavailable.
  • 1/4 cup Fresh Garlic Chives Green onions or scallions can be used instead.
For the Dressing
  • 1/4 cup Balsamic Vinegar Red wine vinegar can be used as a substitute.
  • 2 cloves Minced Garlic Roasted garlic provides a great depth of flavor.
  • 1/4 cup Fresh Herbs (basil or parsley) Dried herbs may suffice in a pinch.

Equipment

  • grill
  • Skillet
  • mixing bowl
  • whisk

Method

Step-by-Step Instructions
  1. Heat your grill to medium-high. Slice the sweet peppers in half and remove the seeds. Grill them, cut side down, for about 5-7 minutes until they are tender and charred. Remove from the grill and let cool slightly before slicing into strips.
  2. In a skillet over medium heat, add a drizzle of olive oil and toss in the burst cherry tomatoes along with minced garlic and a sprig of rosemary. Sauté them for about 4-5 minutes, gently shaking the pan until they burst and release their juices.
  3. In a small bowl, whisk together balsamic vinegar, minced garlic, and your choice of chopped fresh herbs. Allow the dressing to sit for about 5 minutes to meld the flavors.
  4. In a large mixing bowl, combine the grilled pepper strips, burst cherry tomatoes, tangy olives, and sliced crispy grilled bread.
  5. Drizzle the prepared dressing generously over the salad mixture. Toss everything together until all ingredients are lightly coated.
  6. On a large serving platter, place the salad mixture and make room in the center for chunks of creamy burrata cheese. Serve immediately.
