- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Slice a fresh baguette into ½-inch pieces and brush each piece lightly with olive oil, then sprinkle with salt.
- Toast the baguette slices in the oven for 2-3 minutes per side until golden-brown.
- Roughly chop the pistachios and combine them with honey, red pepper flakes, and thyme in a mixing bowl.
- Place the brie rounds on a clean baking sheet and make small cuts on the top of each brie round.
- Spread the pistachio mixture over the tops of the brie rounds, pressing down gently to adhere.
- Drizzle a little olive oil and extra honey on top before placing in the oven.
