Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish with cooking spray or a light coat of olive oil.
- In a large mixing bowl, combine the cottage cheese and large eggs. Whisk thoroughly until the mixture is smooth and creamy.
- Fold in the shredded mozzarella cheese, reserving a small handful for topping later. Add the mini turkey pepperoni slices, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Pour the mixture into your greased baking dish, gently spreading it out with a spatula for an even layer. Sprinkle the reserved mozzarella and remaining turkey pepperoni on top.
- Place the baking dish in the preheated oven and bake for 30-35 minutes.
- Remove the dish from the oven and let it cool for about 5-10 minutes. Cut into squares and serve with a side of marinara sauce for dipping.
