Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, blend together the spice mix ingredients.
  3. Coat the chicken with the spice mix and set aside.
  4. Heat the oil in an oven-safe skillet and sear the chicken for 2–3 minutes on each side.
  5. Toast the rice in the skillet for about 2-3 minutes.
  6. Combine the rice with broth, tomatoes, corn, and beans in the skillet.
  7. Nestle the chicken back into the skillet.
  8. Cover and bake for 25–30 minutes until chicken is cooked through.
  9. Sprinkle cheese over the top and bake uncovered for an additional 5 minutes.
  10. Garnish with cilantro and serve with lime wedges.
