  3. In a separate large bowl, mix applesauce, maple syrup, eggs, cashew milk, and vanilla extract until combined.
  4. Gently fold dry ingredient mixture into the wet ingredients until no flour pockets are visible.
  5. Add any optional mix-ins like blueberries or chocolate chips and fold gently into the batter.
  6. Fill each muffin cup about ¾ full with batter.
  7. Bake in the preheated oven for 15-18 minutes, checking for doneness with a toothpick.
