Preparation Steps
- Wash and trim 1 cup of fresh red round radishes under cool running water. Grate them into a medium-sized mixing bowl until fluffy.
- Transfer the grated radishes into a clean paper towel. Gather the edges to form a pouch and squeeze to remove excess moisture.
- In a medium bowl, mix the drained radishes with 1 cup of room-temperature Greek yogurt, 1 minced garlic clove, 2 tablespoons of olive oil, and the juice of half a lemon. Add 2 chopped scallions and 1 tablespoon of julienned mint.
- Sprinkle in 1.5 teaspoons of salt and 0.75 teaspoons of pepper. Mix everything thoroughly and adjust seasoning to taste.
- Cover the bowl with plastic wrap or transfer the mixture to an airtight container and refrigerate for at least 30 minutes.
- Stir the dip before serving. Garnish with additional mint or chopped scallions and serve with warm pita, fresh vegetables, or crackers.
