- Preheat your oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray with cooking spray.
- Melt ½ cup of unsalted butter and mix with ½ cup granulated sugar, ¼ cup light brown sugar, and 1 teaspoon vanilla extract.
- Combine 1 cup all-purpose flour, ¾ cup rolled oats, and a pinch of salt into the wet mixture until crumbly.
- Reserve 1 cup of the mixture for topping. Press the rest into the bottom of the prepared pan.
- Spread 12 ounces of raspberry preserves evenly over the pressed crust.
- Sprinkle the reserved crumb mixture on top of the preserves and gently press down.
- Bake for 30-32 minutes until the edges set and the top is golden brown.
- Remove from the oven and cool on a wire rack for at least 2 hours before slicing.
