  • 3 cups Cucumbers Firm and dark green
  • 1 medium Red Onion Marinated
  • 2 tablespoons Extra-Virgin Olive Oil
For the Dressing
  • 1 cup Greek Yogurt Full-fat recommended
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 clove Garlic Minced
  • 2 tablespoons Fresh Dill Finely chopped

Method
 

Preparation Steps
  1. Wash and slice the cucumbers into thin rounds. Sprinkle with salt and let sit in a colander for 20 minutes.
  2. Slice the red onion thinly. Combine with lemon juice and olive oil in a bowl. Marinate for at least 10 minutes.
  3. In a mixing bowl, combine Greek yogurt, remaining lemon juice, minced garlic, and dill. Whisk until smooth.
  4. Rinse the cucumbers under cold water and pat dry. Toss cucumbers with marinated onions and dressing.
  5. Serve immediately for best flavor and texture, garnished with additional dill or lemon slices.
