Preparation Steps
  1. Prepare the Jalapeño Cilantro Simple Syrup by combining sliced jalapeño, finely chopped cilantro, water, and sugar in a medium saucepan. Heat over medium, stirring frequently until the sugar fully dissolves, about 5 minutes.
  2. While the syrup is cooling, moisten the rims of highball glasses with fresh lime juice and dip them into Tajín seasoning, coating the edges thoroughly.
  3. In a cocktail shaker, mix 2 ounces of the jalapeño cilantro simple syrup, 1 ounce of freshly squeezed lime juice, and 4 ounces of tonic water.
  4. Shake the mixture gently for about 10 seconds until well-blended, then fill the prepared glasses with ice and pour the non-alcoholic margarita over the ice.
  5. Garnish each glass with a slice of lime and, if desired, additional jalapeño slices. Serve immediately.
