  • 1 teaspoon Pepper
  • 1 teaspoon Onion Powder
  • 2 teaspoons Sage Chopped

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400ºF (200ºC).
  2. Peel and slice the butternut squash into half rounds.
  3. Melt butter in a saucepan and sauté shallots and garlic for 1-2 minutes.
  4. Whisk in flour to form a roux; stir for about 1 minute.
  5. Gradually pour in vegetable stock while whisking until smooth.
  6. Stir in heavy cream, onion powder, pepper, and chopped sage.
  7. Layer a third of the sauce in a greased baking dish, add parmesan and half the squash, and repeat.
  8. Cover with parchment and foil, bake for 20 minutes.
  9. Remove cover, sprinkle remaining parmesan, and bake uncovered for 10 more minutes.
  10. Let it rest for 5-10 minutes before serving.
