  • 2 tablespoons Olive Oil Avocado oil is a nice substitute.
  • 1 large Sweet Vidalia Onion Any onion variety can work.
  • 1-1.25 pounds Boneless Skinless Chicken Breast Diced for quick cooking; thighs can be swapped.
  • 4-5 cloves Garlic Fresh minced garlic adds aromatic flavor.
  • 2 teaspoons Cumin Ground coriander can be an alternative.
  • 1 teaspoon Mexican Oregano Use dried oregano if necessary.
For the Flavor
  • 24 ounces Salsa Verde Store-bought or homemade.
  • 4 cups Cooked Rice Preferably pre-cooked.
  • 1 15.5-ounce can Black Beans Drained and rinsed.
  • 2 tablespoons Lime Juice Fresh is ideal, but bottled works too.
  • 2-4 tablespoons Fresh Cilantro Minced for flavor.
  • Salt and Pepper Essential for seasoning.

Step‑by‑Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced sweet Vidalia onion and sauté for about 3–4 minutes until softened.
  2. Next, add approximately 1 to 1.25 pounds of diced chicken breast to the skillet. Cook for about 5 minutes, stirring until golden brown and no longer pink.
  3. Stir in 4–5 cloves of minced garlic and 2 teaspoons of cumin. Cook for an additional minute until fragrant.
  4. Stir in 24 ounces of salsa verde, 4 cups of cooked rice, and one 15.5-ounce can of drained black beans. Mix well and cook for 3–4 minutes until heated through.
  5. Remove from heat and stir in 2 tablespoons of lime juice and 2–4 tablespoons of minced cilantro. Season with salt and pepper to taste.
