  • 2 tablespoons Apple Cider Use apple juice as an alternative.
For the Quesadillas
  • 2 pieces Flour Tortillas (10-inch) Whole wheat tortillas can be used for a healthier option.
  • 6 ounces Brie Cheese Rind removed, cut into ¼-inch slices. Camembert can be used as a substitute.
  • 1 piece Apple Cored and cut into ¼-inch slices, about ½ pound. Any sweet variety, like Fuji or Honeycrisp, works best.
  • 3 cups Arugula Baby spinach makes a good substitute.
  • ¾ teaspoon Freshly Ground Black Pepper Divided; adjust according to your taste.

Step‑by‑Step Instructions
  1. In a small bowl, whisk together 2 tablespoons of Dijon mustard and 2 tablespoons of apple cider until well combined.
  2. Place a nonstick skillet over medium heat and allow it to warm up for about 2 minutes.
  3. Spread about one-third of the mustard mixture onto one side of a flour tortilla. Layer on one-third of the brie slices on half of the tortilla.
  4. Add one-third of the apple slices on top of the cheese and pile on 1 cup of fresh arugula, finishing with a sprinkle of freshly ground black pepper.
  5. Carefully fold the tortilla in half and cook for about 2 minutes until the bottom is golden brown and crispy.
  6. Gently flip the quesadilla over and cook for another 2 minutes.
  7. Remove the quesadilla from the skillet and let it cool for a minute before slicing into four wedges.
