Ingredients
  

For the Meatballs
  • 1 lb Ground Beef Can use ground turkey, chicken, or lamb.
  • 1 cup Breadcrumbs Add more if mixture is too loose.
  • 1 cup Fresh Parsley
  • 1/2 cup Grated Parmesan Cheese
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil For baking the meatballs.
For the Bowl
  • 2 cups Cooked White Rice
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 small Red Onion
  • 1/2 cup Kalamata Olives
For the Tzatziki
  • 1 cup Tzatziki Sauce
  • 2 tbsp Fresh Lemon Juice

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper, mixing thoroughly.
  3. Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place on a parchment-lined baking sheet.
  4. Drizzle the meatballs with olive oil and bake for 15 to 20 minutes or until browned and cooked through.
  5. Prepare cooked white rice according to package instructions.
  6. In a separate bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives, tossing gently to mix.
  7. Assemble the bowl by placing rice at the bottom, topping with veggies and meatballs.
  8. Drizzle with tzatziki sauce and finish with fresh lemon juice before serving.
