  • 3 tablespoons Soy Sauce Tamari for gluten-free
  • 2 tablespoons Peanut Oil Or vegetable oil
  • 1 tablespoon Cornstarch Thickens sauce
  • 1/2 teaspoon Baking Soda Optional for tenderizing beef
For the Sauce
  • 1 cup Chicken Stock Low-sodium preferred
  • 2 tablespoons Shaoxing Wine Or dry sherry
  • 2 tablespoons Dark Soy Sauce For color and richness
  • 1 tablespoon Brown Sugar Or white sugar
For the Vegetables
  • 2 cups Broccoli Cut into bite-sized florets
  • 3 cloves Garlic Minced
  • 1 tablespoon Ginger Fresh, minced

Method
 

Preparation Steps
  1. Slice flank or skirt steak thinly against the grain. In a medium bowl, combine beef with soy sauce, peanut oil, and cornstarch. Marinate for about 10 minutes.
  2. In a separate bowl, whisk together chicken stock, Shaoxing wine, dark soy sauce, regular soy sauce, brown sugar, and a teaspoon of cornstarch until well combined.
  3. Boil a small amount of water in a large skillet. Add broccoli florets, cover, and steam for about 1 minute until bright green and slightly tender. Set aside.
  4. Increase heat to medium-high, add a splash of peanut oil, and add marinated beef in a single layer. Sear without stirring for 30 seconds, then flip and cook for another 30 seconds.
  5. Add minced garlic and ginger and cook for about 30 seconds until fragrant.
  6. Return steamed broccoli to skillet, add sauce mixture, and stir, cooking for about 1 minute until sauce thickens.
