  • 1 cup white sweet potato or orange sweet potato
  • 1 cup filtered water for boiling
  • 1/2 cup unsweetened coconut yogurt additive-free brand
  • 1/4 cup nutritional yeast for cheesy flavor
  • 1 teaspoon garlic powder
Skillet Ingredients
  • 1 pound skirt steak or flank steak
  • 1 teaspoon sea salt to taste
  • 1/2 teaspoon black pepper omit for AIP
  • 2 tablespoons extra virgin olive oil for sautéing
  • 1 medium yellow or white onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper

Method
 

Step-by-Step Instructions
  1. Boil chopped white sweet potatoes in filtered water for 10-12 minutes until fork-tender. Drain and blend with coconut yogurt, nutritional yeast, and garlic powder until smooth.
  2. Thinly slice the skirt steak against the grain and season with sea salt and black pepper. Slice the onions and bell peppers.
  3. In a large skillet, heat olive oil over medium-high heat. Add sliced onions and bell peppers, sauté for about 5 minutes until tender and caramelized. Remove and set aside.
  4. In the same skillet, add steak strips. Cook for 2 minutes on each side until nicely seared.
  5. Return sautéed onions and peppers to the skillet, toss together, and cook for an additional 30 seconds.
  6. Drizzle dairy-free cheese sauce over the skillet and serve hot.
