Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, add grape tomatoes, olive oil, smoked paprika, kosher salt, black pepper, coriander seeds, and cumin seeds. Toss until well-coated.
  3. Roast the tomato mixture in the oven for about 10-15 minutes until softened.
  4. Crumble feta cheese over the tomatoes and create small wells for the eggs to be cracked into.
  5. Bake for an additional 10-12 minutes until the egg whites are set and yolks are cooked to your liking.
