  • 1 pound boneless skinless chicken breasts can substitute with thighs or cubed turkey
  • 3 tablespoons soy sauce for gluten-free, use tamari or coconut aminos
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 2 tablespoons sesame oil optional but recommended
  • 1 tablespoon cornstarch used in a slurry to thicken the sauce
  • 2 scallions green onions for garnish
  • 1 tablespoon sesame seeds optional garnish

Method
 

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add sliced chicken, season, and sauté for about 5-6 minutes until browned. Remove and keep warm.
  2. In the same skillet, add another tablespoon of oil, garlic, and ginger; stir-fry for about 30 seconds until fragrant.
  3. Add chopped zucchini and sliced mushrooms; stir-fry for 4-5 minutes until tender yet crisp.
  4. Return chicken to the skillet, pour in soy sauce, drizzle with sesame oil, and stir to combine; cook for 1-2 minutes.
  5. Mix cornstarch with water to create a slurry, add it to the skillet, and cook for another 1-2 minutes until sauce thickens.
  6. Stir in chopped green onions, transfer to a serving dish, and garnish with sesame seeds. Serve hot over rice or noodles.
