Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (176°C) and rinse the black rice under cold water to remove excess starch.
  2. In a medium saucepan, bring vegetable stock to a boil before adding the rinsed rice. Lower the heat, cover, and let it simmer for 30-45 minutes until the rice is tender.
  3. Spread the raw walnuts on a baking sheet and toast them for about 5 minutes or until they become fragrant.
  4. Clean the mushrooms using a damp cloth and remove the stems to create a cup for filling.
  5. Brush each mushroom with olive oil, and set them aside on a baking sheet.
  6. Fluff the cooked black rice and transfer it to a mixing bowl. Stir in the toasted walnuts, vegan parmesan, minced garlic, and a drizzle of olive oil.
  7. Pre-bake the cleaned mushrooms in the oven for 10 minutes.
  8. Fill each mushroom cap generously with the savory rice mixture.
  9. Top the stuffed mushrooms with additional vegan parmesan. Bake for an additional 15-18 minutes, or until the mushrooms are tender.
  10. Remove from oven and let cool for a few minutes before serving.
