Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
- In a mixing bowl, combine halved Brussels sprouts with olive oil, salt, and pepper, then spread them on one side of the baking sheet.
- Place salmon fillets skin-side down on the other side of the baking sheet, brush with olive oil, and season with salt and pepper.
- Bake both Brussels sprouts and salmon for 10-12 minutes until salmon is flaky and sprouts are tender and crispy.
- In a saucepan, combine BBQ sauce, coconut aminos, rice vinegar, ginger, and salt; simmer for 5 minutes until slightly thickened.
- Remove the baking sheet from the oven and glaze the salmon and sprouts with the BBQ sauce mixture.
- Return to the oven for 3-4 minutes to meld the flavors together.
- Garnish with chopped green onions and sesame seeds before serving.
