  • Oven
  • Ziplock Bag

Method

Step-by-Step Instructions
  1. In a blender, combine your marinade ingredients: red wine, olive oil, salt, pepper, garlic, and fresh thyme. Blend until smooth, then transfer into a ziplock bag and add the lamb chops, ensuring they're well-coated. Seal and refrigerate for at least 1 hour, or overnight for better flavor.
  2. Preheat your oven to 400°F (200°C) while the lamb chops marinate.
  3. Remove lamb chops from marinade, discard marinade, and season each chop with salt and pepper.
  4. Heat a splash of olive oil in a skillet over high heat. Sear the lamb chops for 1-2 minutes on each side until golden brown.
  5. Transfer the lamb chops to an oven-safe dish or directly in the skillet. Bake for 8-10 minutes until they reach an internal temperature of 135°F for medium-rare.
  6. Once baked, remove from the oven and let rest for 2-5 minutes for juices to redistribute. Prepare the mint chimichurri sauce meanwhile.
