  • 1 tsp Salt
  • 1 tsp Black Pepper Adjust to taste.
  • 1 cup Panko Breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 1 tbsp Smoked Paprika Regular paprika can work for a milder flavor.
  • 1 tsp Dried Oregano Fresh herbs can replace dried.
  • 1 tsp Dried Basil Fresh herbs can replace dried.
  • 2 cloves Garlic Garlic powder can be used if needed.
For the Veggies
  • 2 medium Sweet Potatoes Regular potatoes or butternut squash can be substituted.
  • 2 cups Broccoli Can substitute with seasonal veggies.
  • 2 tbsp Olive Oil Feel free to use any cooking oil.
For the Sauce
  • 1 cup Barbecue Sauce Choose your favorite store-bought or homemade version.
  • 1 tbsp Balsamic Vinegar Lemon juice can be substituted.
  • 1 tbsp Tamari Regular soy sauce can be used.
  • 2 tbsp Water
For the Avocado Goddess Sauce
  • 1 ripe Avocado Silken tofu is a great vegan alternative.
  • 1/2 cup Yogurt Use dairy or dairy-free based on preferences.
  • 2 tbsp Lime Juice Lemon juice is a suitable substitute.
  • Fresh Herbs (optional) Cilantro or parsley can enhance freshness.

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C). In a mixing bowl, combine ground beef, Dijon mustard, Worcestershire sauce, salt, pepper, Panko breadcrumbs, smoked paprika, oregano, basil, and garlic. Mix until fully combined and shape into 16 meatballs.
  2. Heat olive oil in a skillet over medium heat. Brown meatballs for 2-3 minutes until golden on all sides. Transfer to oven and bake for 15 minutes.
  3. On a baking sheet, drizzle sweet potatoes with olive oil, add salt and pepper, and roast for 25-30 minutes. Roast broccoli on a separate sheet for about 20 minutes.
  4. Whisk together barbecue sauce, balsamic vinegar, tamari, and water in a bowl. After meatballs bake, pour BBQ sauce over them in the skillet and heat until thickened.
  5. In a food processor, blend avocado, yogurt, lime juice, garlic, salt, and herbs until smooth. This is your Avocado Goddess Sauce.
  6. To serve, scoop quinoa into each bowl, top with sweet potatoes, broccoli, and meatballs. Drizzle avocado sauce over everything and enjoy!
