Preparation Steps
- Preheat your oven to 425°F (220°C). In a mixing bowl, combine ground beef, Dijon mustard, Worcestershire sauce, salt, pepper, Panko breadcrumbs, smoked paprika, oregano, basil, and garlic. Mix until fully combined and shape into 16 meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs for 2-3 minutes until golden on all sides. Transfer to oven and bake for 15 minutes.
- On a baking sheet, drizzle sweet potatoes with olive oil, add salt and pepper, and roast for 25-30 minutes. Roast broccoli on a separate sheet for about 20 minutes.
- Whisk together barbecue sauce, balsamic vinegar, tamari, and water in a bowl. After meatballs bake, pour BBQ sauce over them in the skillet and heat until thickened.
- In a food processor, blend avocado, yogurt, lime juice, garlic, salt, and herbs until smooth. This is your Avocado Goddess Sauce.
- To serve, scoop quinoa into each bowl, top with sweet potatoes, broccoli, and meatballs. Drizzle avocado sauce over everything and enjoy!
