  • 3-4 cups Butternut Squash Can swap with sweet potato.
  • 4 oz Mushrooms Can substitute with finely chopped zucchini.
  • 0.5 medium Onion Can use shallots as a milder alternative.
  • 2 lbs Ground Breakfast Sausage Can swap with ground turkey or chicken sausage.
For the Aromatics
  • 1 sprig Rosemary Fresh is best; reduce amount if using dried.
  • 1 tsp Smoked Paprika Regular paprika can be used for less smokiness.
  • 1 tsp Cinnamon Optional; can reduce or omit if desired.

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut butternut squash into large cubes, pulse in a food processor until finely chopped. In a bowl, mix with diced onion and chopped mushrooms.
  3. Add ground breakfast sausage, rosemary, smoked paprika, and cinnamon to the mixture. Gently combine everything using your hands.
  4. Form small golf ball-sized meatballs and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 40 minutes until firm and slightly golden.
  6. Remove from oven, let cool slightly, and serve warm or cool completely for meal prep.
