Step-by-Step Instructions for Irresistible Caramelized Onion and Goat Cheese Tarts
  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat until melted. Add 2 sliced yellow onions, 1 teaspoon of sugar, a pinch of salt, and freshly ground black pepper. Cook for about 5 minutes without stirring.
  2. After 15 minutes, the onions should be golden and fragrant; stir in 1 tablespoon of balsamic vinegar and a few sprigs of fresh thyme, continuing to cook for an additional 5 minutes until the onions are jammy.
  3. On a lightly floured surface, roll out 1 sheet of puff pastry until it’s about ¼ inch thick. Cut the pastry into 6 rectangles, place on a baking sheet lined with parchment paper, and chill in the refrigerator for 10 minutes.
  4. Spread a layer of the cooled caramelized onions over each rectangle, leaving a border around the edges. Crumble goat cheese over the onions and top with thyme leaves.
