  • 1 pound Boneless Skinless Chicken Thighs can substitute with chicken breasts
  • 1 cup Dry Quinoa gluten-free
  • 8 ounces White Mushrooms sliced
  • 4 ounces Baby Spinach Leaves can use frozen if necessary
  • 2 cups Water or low-sodium broth for more flavor
For the Mustard Sauce
  • 3 tablespoons Dijon Mustard use yellow mustard if needed
  • 2 tablespoons Maple Syrup can substitute with honey
  • 1 tablespoon Lemon Juice fresh is preferable
For Garnish
  • 1 tablespoon Fresh Parsley chopped

Preparation Steps
  1. Heat a drizzle of olive oil in a large skillet over medium heat. Sauté sliced mushrooms for 5-7 minutes until browned.
  2. Add boneless skinless chicken thighs to the skillet and cook for 6-8 minutes on each side until golden and cooked through (165°F). Remove and let rest.
  3. Stir in dry quinoa and water or broth. Bring to a simmer, then cover and cook on low for 15-20 minutes until quinoa is tender.
  4. Whisk together Dijon mustard, maple syrup, and lemon juice in a small bowl until smooth.
  5. Fold in baby spinach leaves, cover, and cook for 2-3 minutes until wilted.
  6. Combine sautéed mushrooms and chicken with the quinoa mixture, then pour over the mustard sauce and stir to combine. Cook for an additional 2-3 minutes on low heat.
  7. Garnish with fresh parsley and serve warm.
