Ingredients
  

For the Chicken Marinade
  • 1 lb Chicken Thighs Boneless and skinless recommended.
  • 2 Tbsp Lemon Juice Can substitute lime juice.
  • 2 Tbsp Olive Oil Avocado oil can be used as an alternative.
  • 2 cloves Garlic Minced.
  • 1 Tbsp Dried Oregano Fresh oregano can be used in larger quantity.
  • 1 tsp Sweet Paprika Smoked paprika adds more depth.
  • 1 Tbsp Honey or Maple Syrup Agave syrup can work in a pinch.
  • 1 tsp Kosher Salt Adjust based on dietary needs.
For the Lemon Rice
  • 1 cup Long-Grain White Rice Substitute with brown rice if desired.
  • 2 cups Low-Sodium Chicken Stock or Water Vegetable broth can be used for a vegetarian option.
  • 1 Tbsp Lemon Zest Best not to substitute.
For Serving
  • 1 cup Plain Yogurt Greek yogurt is preferable.
  • 2 Tbsp Fresh Dill Parsley can be used as a substitute.
  • optional Marinated Olives Choose preferred olives.

Method
 

Preparation
  1. Soak wooden skewers in water for at least 15 minutes to prevent burning.
  2. In a large mixing bowl, combine chicken thighs with lemon juice, olive oil, minced garlic, oregano, paprika, honey, and salt. Marinate for 15-20 minutes or overnight in the refrigerator.
  3. Heat olive oil in a pot over medium-low heat, add garlic and rice, toasting until fragrant for about 2-3 minutes. Add chicken stock, lemon zest, and salt. Cook until boiling, then cover and simmer for 15 minutes.
  4. Remove pot from heat and let sit covered for 10 minutes. Fluff the rice with a fork and mix in lemon juice.
  5. Preheat your broiler and line a baking sheet with foil. Thread marinated chicken onto skewers, place on the baking sheet and broil for 12-15 minutes, turning occasionally until cooked through.
  6. Serve the chicken skewer over lemon rice, topped with yogurt, dill, and olives if desired.
