Preparation
- Soak wooden skewers in water for at least 15 minutes to prevent burning.
- In a large mixing bowl, combine chicken thighs with lemon juice, olive oil, minced garlic, oregano, paprika, honey, and salt. Marinate for 15-20 minutes or overnight in the refrigerator.
- Heat olive oil in a pot over medium-low heat, add garlic and rice, toasting until fragrant for about 2-3 minutes. Add chicken stock, lemon zest, and salt. Cook until boiling, then cover and simmer for 15 minutes.
- Remove pot from heat and let sit covered for 10 minutes. Fluff the rice with a fork and mix in lemon juice.
- Preheat your broiler and line a baking sheet with foil. Thread marinated chicken onto skewers, place on the baking sheet and broil for 12-15 minutes, turning occasionally until cooked through.
- Serve the chicken skewer over lemon rice, topped with yogurt, dill, and olives if desired.
