- In a food processor, combine fresh cilantro, parsley, oregano, shallot, garlic, and jalapeño. Pulse until finely chopped.
- Add fresh lemon juice, red wine vinegar, olive oil, kosher salt, and freshly ground pepper. Blend until well combined.
- Place chicken thighs in a shallow baking dish. Season with salt and pepper, and pour 1/4 cup of chimichurri sauce over chicken. Marinate for at least 20 minutes.
- Preheat grill to medium-high heat, around 400-450°F.
- Grill chicken thighs for approximately 5-6 minutes per side until juices run clear and internal temperature reaches 165°F.
- Remove chicken from the grill and let it rest. Serve with additional chimichurri sauce on the side.
