Step-by-Step Instructions
  1. Prepare the Meatball Mixture by combining ground beef, onion, arborio rice, parsley, dill, egg, oregano, salt, and pepper in a large bowl.
  2. Form the Meatballs into golf ball-sized portions and refrigerate for 15-20 minutes.
  3. Simmer the Meatballs in chicken broth and olive oil over medium heat for approximately 30 minutes.
  4. Make the Avgolemono Sauce by whisking together eggs and lemon juice, then temper with hot broth.
  5. Incorporate the tempered sauce into the pot with meatballs and cook for an additional 2-3 minutes.
