  • 2 cups Zucchini fresh and tender, drained and salted
  • 1 can Diced Tomatoes well-drained
  • 1 cup Groats or substitute with brown rice or quinoa
  • 1 medium Onion yellow or white
  • 3 cloves Garlic minced
For the Topping
  • 2 cups Cheese (shredded) feel free to use dairy-free options
  • 1 teaspoon Oregano or substitute with Italian seasoning
  • 1 teaspoon Paprika or substitute with chili powder
  • 1/4 cup Fresh Basil use right before serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add ground turkey and cook for 8 to 10 minutes, stirring occasionally until browned.
  3. Stir in diced onion and minced garlic, sautéing for about 2 minutes until the onion is translucent.
  4. Add diced zucchini and cook for 3 to 4 minutes until just tender.
  5. Mix in cooked groats, well-drained diced tomatoes, oregano, and paprika. Then add half of the shredded cheese.
  6. Transfer the mixture to a lightly coated 9x13 baking dish and top with remaining shredded cheese.
  7. Bake uncovered for 20 to 25 minutes until cheese is melty and golden brown.
  8. Remove from the oven and allow to cool slightly for 5 minutes before serving. Optionally, sprinkle with fresh basil.
