- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of olive oil over medium-high heat. Add ground turkey and cook for 8 to 10 minutes, stirring occasionally until browned.
- Stir in diced onion and minced garlic, sautéing for about 2 minutes until the onion is translucent.
- Add diced zucchini and cook for 3 to 4 minutes until just tender.
- Mix in cooked groats, well-drained diced tomatoes, oregano, and paprika. Then add half of the shredded cheese.
- Transfer the mixture to a lightly coated 9x13 baking dish and top with remaining shredded cheese.
- Bake uncovered for 20 to 25 minutes until cheese is melty and golden brown.
- Remove from the oven and allow to cool slightly for 5 minutes before serving. Optionally, sprinkle with fresh basil.
