Ingredients
  

For the Meatballs
  • 1 lb Ground Meat mix of lamb and beef recommended
  • 1 medium Onion (Grated) shallots can work too
  • 1/4 cup Parsley fresh herbs are best
  • 1/4 cup Cilantro optional, use only parsley if not available
  • 1 teaspoon Cumin for Moroccan spice profile
  • 1 teaspoon Paprika for Moroccan spice profile
  • 1/2 teaspoon Cinnamon for Moroccan spice profile
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 2 tablespoons Tomato Paste thickens the sauce
  • 2 medium Tomatoes (Grated) fresh is best; canned can be used
For the Poached Eggs
  • 4 Eggs optional for a lighter meal

Equipment

Method
 

Step 1: Prepare Meatballs
  1. Combine ground meat with grated onion, chopped parsley, cilantro, cumin, paprika, cinnamon, salt, and pepper. Mix until well combined, then shape into meatballs and chill for at least 30 minutes.
Step 2: Make Sauce
  1. Heat olive oil in a pan, sauté chopped onion until golden. Add minced garlic, cumin, paprika, and cinnamon, cooking for a minute. Stir in tomato paste and grated tomatoes, simmer for 25-30 minutes.
Step 3: Cook Meatballs
  1. Place meatballs in the simmering sauce, cover, and reduce heat to low. Simmer for 10-15 minutes until cooked through.
Step 4: Add Eggs
  1. Create wells in the sauce and crack eggs into them. Cover and poach until whites are set but yolks are runny, about 10-15 minutes.
Step 5: Serve
  1. Garnish with chopped herbs and serve hot with bread or couscous.
