For the Cheese
  • 1 cup Mozzarella Cheese Substitutes like feta or ricotta can be used.
  • 1/4 cup Parmesan Cheese Optional; nutritional yeast is a dairy-free alternative.

Step-by-Step Instructions
  1. Dice fresh tomatoes into bite-sized pieces and mince two cloves of garlic. Set aside.
  2. In a large pan over medium heat, bring water or tomato sauce to a boil. Add Israeli couscous and reduce to a simmer. Cook for about 12 minutes.
  3. Once the couscous is cooked, stir in the prepared tomatoes and minced garlic. Cook for an additional 3-5 minutes until softened.
  4. Lower the heat and mix in mozzarella cheese, stirring until melted and creamy.
  5. Remove from heat and garnish with fresh basil and Parmesan cheese, if desired. Serve warm.
