Method

Step-by-Step Instructions
  1. In a large sauté pan, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add a pinch of crushed red pepper flakes and finely minced garlic, sautéing for about 1 minute until fragrant. Then add halved cherry tomatoes and cook for 8-12 minutes, stirring occasionally until they soften but still hold their shape.
  2. Next, pour in ½ cup of dry white wine and let it simmer gently for about 2 minutes, allowing the alcohol to cook off and the flavors to meld. Stir in a handful of fresh basil, along with 2 tablespoons of lemon juice, zest from the lemon, ½ teaspoon of salt, a pinch of granulated sugar, and freshly cracked black pepper to taste. Cook for an additional 2 minutes to combine flavors.
  3. In another nonstick pan, heat 2 tablespoons of olive oil over medium-high heat. Pat the cod fillets dry and season both sides generously with salt and pepper. Carefully place the cod in the hot pan, searing for about 3 minutes until the underside is golden brown.
  4. Gently flip the cod fillets using a spatula and cook for an additional 3-4 minutes, or until the fish is opaque and flakes easily with a fork. During this time, ensure your sauce is still warm, and keep it ready for serving.
  5. Once the cod is perfectly cooked, pour the vibrant tomato basil sauce over the fillets in the pan, allowing it to warm through for about 1 minute. Make sure each piece of cod is well-coated with the flavorful sauce. Now it's time to plate your delightful pan-seared cod and enjoy the delicious aroma filling your kitchen!
