Ingredients

For the Cookies
  • 1 cup Unsalted Butter Provides richness and moisture; margarine can be used for a dairy-free twist.
  • 1 sprig Fresh Rosemary Infuses a fragrant flavor; fresh is best.
  • 1 1/3 cups White Granulated Sugar Offers sweetness; brown sugar will add depth.
  • 1 large Egg Binds ingredients; use room temperature for better blending.
  • 1 large Egg Yolk Adds richness; can be skipped for a lower-fat option.
  • 1 tsp Vanilla Extract Enhances flavor; pure vanilla is recommended.
  • 2 1/2 cups All-Purpose Flour Gives structure; spoon and level for accuracy.
  • 1 tsp Baking Soda Leavening agent; cream of tartar can swap in.
  • 1/2 tsp Baking Powder Helps with fluffy texture; self-rising flour in a pinch.
  • 1/4 tsp Salt Balances sweetness; use sea or kosher salt for a twist.
  • 2 tsp Chopped Fresh Rosemary Intensifies flavor in each bite; same substitution tips as fresh.
  • 2 tsp Lemon Zest Brings fresh citrus zing; orange zest can be used.
For the Lemon Sugar
  • 1/4 cup Granulated Sugar Sweetens the cookies.
  • 1 tsp Lemon Zest Enhances citrus flavor; adjust to taste.

  • Ice cream scoop

Method

Step-by-Step Instructions
  1. Begin by melting the unsalted butter in a saucepan over medium heat, swirling occasionally until golden brown and nutty, about 5-7 minutes. Add the rosemary sprig and then remove it once done. Cool the butter, then refrigerate for 30-45 minutes until it solidifies.
  2. In a large mixing bowl, combine the chilled brown butter and white granulated sugar. Beat with an electric mixer for about 2 minutes until light and fluffy. Incorporate the large egg, egg yolk, and vanilla extract, mixing for one more minute.
  3. In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and chopped fresh rosemary. Gradually add this to the wet mixture and mix gently until just combined to maintain a tender texture.
  4. Portion out the cookie dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Cover with plastic wrap and refrigerate for at least 30 minutes.
  5. Mix together the granulated sugar and lemon zest in a small bowl, rubbing the zest into the sugar. Set aside while you preheat the oven.
  6. Preheat the oven to 350°F (175°C). Roll each chilled cookie dough ball in the lemon sugar mixture, coating fully. Bake for about 12 minutes or until edges are golden and centers are puffy. Let cool completely on a wire rack.
