  • 1 teaspoon Dried Sage or thyme for a replacement
  • 1 teaspoon Sweet Paprika use smoked paprika for added depth
  • to taste Fresh Chili or Red Chili Flakes
  • 1 fillet Anchovy skip for a vegetarian version
  • 2 tablespoons Tomato Paste available in tubes or cans
  • 1 cup Chicken Broth or vegetable broth for vegetarian option
  • 1 can Crushed Tomatoes use canned or fresh
For the Finish
  • 4 cups Fresh Spinach kale or Swiss chard can be substituted
  • 1/2 cup Grated Parmesan or nutritional yeast for vegan option
  • 2 tablespoons Chopped Parsley basil or cilantro can provide a different twist

Method
 

Step-by-Step Instructions
  1. Prep the ingredients by finely chopping the yellow onion and mincing the garlic cloves. Pat the salmon dry and season with salt and black pepper.
  2. In a large nonstick skillet, heat the olive oil and butter over medium heat. Sear the salmon for 3-4 minutes on each side until golden brown.
  3. Lower the heat and cook the chopped onion and minced garlic for about 2 minutes until translucent.
  4. Stir in the anchovy (if using), red chili flakes, salt, black pepper, dried oregano, dried sage, and sweet paprika. Cook for 1 minute.
  5. Add the chicken broth into the skillet and let it simmer for about 2 minutes.
  6. Mix in the crushed tomatoes and let the sauce simmer for about 5 minutes until it thickens.
  7. Add the spinach to the skillet, stirring until just wilted, about 2-3 minutes.
  8. Nestle the seared salmon back into the skillet, spooning some sauce over the top. Cook for an additional 3 minutes until cooked through.
  9. Serve warm garnished with chopped parsley, red pepper flakes, and black pepper.
