  • 2 cups Four Cheese Mexican Blend Any cheese blend can be used

  • 2 tablespoons Butter For sautéing onions

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) for the enchiladas.
  2. Melt 2 tablespoons of butter in a skillet over medium heat and sauté the onion until translucent, about 5 minutes.
  3. Fold in 1 pound of imitation crab, seasoning with salt and pepper. Cook for about 3-4 minutes.
  4. Reduce heat to low, mix in 1/4 cup cilantro, juice of half a lime, 1/2 cup sour cream, and 2 cups cheese blend. Stir until smooth.
  5. Taste and adjust flavor with hot sauce.
  6. Fill each wrap with the crab mixture, fold sides, and roll tightly. Place in a greased baking dish.
  7. Pour enchilada sauce over the wraps.
  8. Sprinkle remaining cheese on top.
  9. Bake for 25-30 minutes until cheese is melted and bubbly.
  10. Let cool briefly before serving with garnishes like lettuce and sour cream.
