Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the spaghetti squash in half lengthwise, scoop out the seeds, drizzle insides with olive oil, sprinkle with salt, and place cut side down on the baking sheet. Roast for 30–40 minutes.
  3. Heat a skillet over medium heat with olive oil, add cubed chicken breast, seasoning with half of the cumin, chili powder, turmeric, and a pinch of salt. Sauté for 7–10 minutes until golden brown and fully cooked.
  4. Stir in chopped green bell pepper, diced Roma tomatoes, drained corn, and black beans to the skillet. Sprinkle in the remaining spices and mix thoroughly, cooking for an additional 5 minutes.
  5. Once the spaghetti squash is done, scrape the flesh with a fork to create strands and transfer to the skillet. Mix everything thoroughly, and taste to adjust seasoning.
  6. Stuff the spaghetti squash halves with the filling, pressing it in firmly. Sprinkle shredded cheddar cheese on top.
  7. Broil for 1–2 minutes until the cheese bubbles and turns golden brown.
  8. Garnish with freshly chopped cilantro before serving.
