Method
 

Step-by-Step Instructions
  1. Begin by finely chopping the garlic and roughly chopping the parsley. Combine in a mortar and pestle with sea salt and olive oil, mashing until smooth. Stir in the sherry vinegar.
  2. Slice the heirloom tomatoes into 1/8-inch rounds and arrange them on a serving platter.
  3. Slice the red onion thinly and sprinkle evenly over the tomatoes.
  4. Open the can of sardines, remove bones if any, and arrange the fillets over the salad.
  5. Sprinkle the capers over the salad.
  6. Drizzle the prepared dressing evenly over the salad.
  7. Season with black pepper and additional sea salt to taste. Serve immediately.
