Step-by-Step Instructions
  1. Start by dicing your sweet potatoes into uniform cubes. Microwave with a pinch of sea salt for 4–6 minutes until tender.
  2. Heat olive oil in a skillet over high heat. Sear the steak for about 10 minutes, turning every 2 minutes until browned.
  3. Remove the steak and add sweet potatoes to the skillet. Sauté for 3–4 minutes until charred.
  4. Add minced garlic in the center, sauté for 1 minute, then add bell peppers and green onions, cooking until softened.
  5. Return steak to the skillet with coconut aminos. Toss everything together and cook for 1–2 minutes.
  6. Finish with cracked black pepper and sprinkle with cilantro before serving.
