- Heat the oil by pouring 2 tablespoons of vegetable oil into a large skillet over medium-high heat for about 2 minutes.
- Add 1 pound of ground beef to the pan, breaking it apart with a wooden spoon as it cooks for 3-5 minutes until browned.
- Stir in 2 minced garlic cloves and 1 inch of minced ginger, sautéing for an additional 1 minute.
- Pour in 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of brown sugar, and 1/2 teaspoon of black pepper, stirring thoroughly for 1 minute.
- Add the chopped stems of 1 head of bok choy to the skillet, cooking for around 1 minute.
- Include the bok choy leaves and stir-fry for an additional 2-3 minutes until wilted but still bright green.
- If using, drizzle 2 tablespoons of sesame oil over the stir-fry, toss to combine, and serve immediately over jasmine rice or noodles.

Notes
Sear the beef for better flavor, and avoid overcrowding the pan while stir-frying.
