Ingredients
  

For the Tuna Cakes
  • 1 can Solid white tuna drained
  • 1 cup Panko breadcrumbs adds crunch
  • 2 tbsp Green onions finely chopped
  • 1 medium Red bell pepper diced
  • 2 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 1 large Egg for binding
  • 2 tbsp Soy sauce low-sodium if preferred
  • 2 tbsp Cilantro chopped, optional
  • 1 tbsp Sesame oil provides nutty aroma
  • to taste Salt for seasoning
  • to taste Pepper for seasoning
  • ¼ cup Vegetable oil for frying
For Spicy Mayo
  • ½ cup Mayonnaise low-fat or vegan if desired
  • 1 tbsp Sriracha sauce adjust for spice preference
  • 1 tbsp Lime juice substitute with lemon juice if necessary
  • a pinch Salt to enhance flavor

Method
 

Prepare Ingredients
  1. Gather all your ingredients for the Tuna Cakes. Ensure the tuna is well-drained, and chop the green onions, red bell pepper, and cilantro. Mince the garlic and grate the ginger.
Mix Tuna Base
  1. In a large bowl, combine the tuna, panko, green onions, red bell pepper, garlic, and ginger. Add the egg, soy sauce, and sesame oil, then season with salt and pepper.
Form Patties
  1. Wet your hands to prevent sticking and shape the mixture into eight patties, about ½ inch thick. Refrigerate for about 10 minutes.
Heat Oil
  1. In a non-stick skillet, heat ¼ cup of vegetable oil over medium heat until shimmering.
Cook Patties
  1. Carefully place the patties into the hot oil and cook for 3-4 minutes on each side until golden brown.
Drain Oil
  1. Transfer cooked patties to a plate lined with paper towels to absorb excess oil.
Prepare Spicy Mayo
  1. In a small bowl, mix mayonnaise, sriracha, lime juice, and a pinch of salt until smooth.
Serve
