Steps to Prepare Turkey Pumpkin Chili
  1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add ½ chopped medium onion and sauté for about 5 minutes until soft and translucent.
  2. Add 3 minced garlic cloves and 1 pound of lean ground turkey. Cook for another 5 minutes, breaking up the turkey as it browns.
  3. While the turkey is cooking, prepare the remaining ingredients: chop 1 small green bell pepper, drain 1 can each of white beans and red kidney beans, and measure out your spices and canned goods.
  4. Stir in 1 can (14 oz) of diced tomatoes, 1 can (14 oz) pumpkin puree, the drained beans, and spices: 2 tablespoons chili powder, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, and ¼ teaspoon dried oregano. Pour in 1 cup of chicken broth and mix well.
  5. Increase heat to bring the mixture to a boil, then reduce to low heat to simmer for 10-15 minutes, stirring occasionally.
  6. Once thickened to your liking, remove from heat. Serve hot, garnished with cilantro, sour cream, or cheese.
