  • 1.5 tsp instant yeast Use active dry yeast if needed.
  • 450 ml water Room temperature.
Scallion Filling
  • 2 cups chopped scallions Green onions work as a substitute.
  • 0.25 cup olive oil Try flavored oils for more taste.
Optional Topping
  • 1 tbsp white sesame seeds Adds a crunchy texture.

Method
 

Dough Preparation
  1. In a large mixing bowl, whisk together flour, salt, and instant yeast. Gradually pour in room temperature water, stirring until no dry flour remains. Cover and let rest for 30 minutes.
  2. Gently stretch and fold the dough a few times in the bowl. Cover and let rest for another 30 minutes.
  3. Repeat the stretch and fold process again. Cover and let rest for 30 minutes.
  4. Let the dough rise in a warm spot until doubled in size, about 2-3 hours, or refrigerate overnight for a richer flavor.
Filling Preparation
  1. Mix chopped scallions with olive oil and a pinch of salt in a small bowl. Set aside.
Shaping and Baking
  1. Generously oil a baking dish. Transfer the risen dough to the dish, gently stretching it to fit.
  2. Sprinkle half the scallion mixture evenly over the dough and fold to seal.
  3. Let rest for another 30 minutes.
  4. Preheat oven to 475°F (245°C). Drizzle olive oil over the dough, sprinkle with remaining scallion mixture and sesame seeds. Create dimples.
  5. Bake for 15-20 minutes until golden brown. Brush with olive oil after baking, then slice and serve.
