Preparation Steps
- In a medium bowl, whisk together rice vinegar, tamari or soy sauce, toasted sesame oil, grated ginger, minced garlic, and maple syrup until well combined.
- Bring a large pot of water to a rolling boil. Add a pinch of salt and cook the soba noodles according to package instructions until al dente, about 4-5 minutes. Drain and rinse with cold water.
- In a large mixing bowl, add cooled soba noodles and pour the prepared dressing over them. Gently toss to coat the noodles evenly.
- Divide the dressed noodles into serving bowls and top with sliced avocados, blanched snap peas, edamame, and radishes.
- Squeeze fresh lemon juice over each bowl and sprinkle with sesame seeds. Optionally drizzle more tamari or sesame oil before serving.
